11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed sandwiches with deli meat being cooled in front RIC tightly packed and stacked with no monitoring. COS: PIC had food employee move trays to WIC and separated stacked trays to allow for adequate air flow. Staff should check temperature in 1 hour to see if cooling properly and utilize freezer if needed. Verify with thermometer before stacking - must be 41 degrees Fahrenheit before 3:30pm.
18 - insects, rodents, and animals not present

Observed live and dead roaches in facility. CTM: Contact pest control to re-evaluate control measures and retreat area if needed (last visit was 4 days ago).
