6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS foods in the outdoor walk-in cooler that had been stored out of temp for several days. CA, TCS foods that are being cold held shall be stored at 41 degrees or below. COS, PIC discarded all of the TCS foods found in the walk-in cooler. HVAC technician has been notified and is scheduled to diagnose and repair the unit. Email proof of repair completion to tamika.pridgon@dph.ga.gov.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed expired Food Manager Certification. CA: Take certification exam as soon as possible and notify the Health Authority of date. Email copy of updated certificate to Tamika.Pridgon@dph.ga.gov.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed debris on clean dishes sitting in the drying rack in the main kitchen. CA, all food contact surfaces shall be clean and free of accumulations. COS, PIC removed the dirty dishes and ran them back through the dish washer.

Observed large accumulation of old food debris on the can opener in the main kitchen. CA, all food contact surfaces shall be clean and free of accumulations. COS, PIC removed the can opener and placed it in the three compartment sink to be cleaned.
