Observed hot held boba at front counter not held at 135 degrees Fahrenheit or higher. COS: Boba discarded - gave time policy to be used for 4-hour hold.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed bleach used as sanitizer solution without any chlorine test strips in facility. COS: Changed sanitizer buckets to sanitizer dispensed at 3-comp sink - concentration verified with test strips in facility.
