6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed roast beef at 59 degrees fahrenheit and mashed potatoes at 55 degrees fahrenheit in the "true" reach-in cooler. TCS foods for cold holding shall be held at 41 degrees or lower.
11D - thermometers provided and accurate
Regulation: 511-6-1.05(2)(k) - temperature measuring device (tmd), food - accuracy (pf)
Observed that there was no temperature measuring device present inside any of the reach-in coolers or freezer. Temperature measuring devices must be present and accurate.
