Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Lettuce, coleslaw, and hot dogs are not date marked with the date of preparation in the reach-in cooler. Food held over 24 hours must be properly dated. COS - Food dated at the time of inspection.
