Improper cooling methods are being implemented to cool prepared queso. Pans are allowed to sit in oven in large pans before being placed in ice bath. Ice bath is used once pans are removed, but pans of queso are then split into even smaller pans due to thickness of product and food item is still not cooling quickly enough. Once transferred into even more shallow pans, product began to cool to a safer speed.
