2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
observed plate, bowl, utensils, and rags in hand washing sink. COS-items removed. CA-keep sink clear and accessible at all times of operation.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
observed raw pork chops sitting in a tub but the tub was on the portion of the dishwashing table where clean dishes come out/dry. CA-do not place raw food items where there is the possibility of contamination on dishes. COS-food removed and placed elsewhere.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
observed cooked chicken, sausage, cheese, potato salad, baked beans in walk in cooler with no date marking. CA-mark all items with date prepped and use/dispose of within 7 day period.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
observed a mouse run through the walk in cooler. CA-contact pest management and have facility treated immediately. (pest management was called and service ordered at time of inspection.) CA-gap below walk in cooler door around 2" needs to be sealed, obtain weather seal to close gap.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(h),(i) - approved sewage disposal; system; other liquid wastes and rainwater (p) (c)
observed dishwasher draining to the outside of the building onto the ground CA-all waste water must be disposed of in the proper fashion. COS-pipe that was removed to allow water to flow to the ground was returned to direct the water to the proper location.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
observed grease hood vent caked with grease, CA-clean/have serviced asap. (service was ordered)
