Observed incorrect storage of food in reach-in-cooler. Observed raw beef and pork stored next to cooked food, raw beef stored on top of raw chicken, and raw shrimp stored next to raw beef and raw chicken. C/A: Store food according to internal cooking temperature: ready to eat food, seafood, beef and pork, and chicken.
6-1A - proper cold holding temperatures

Observed rice and pork sitting on countertop with temperatures of 91 degrees Fahrenheit and 96 degrees Fahrenheit in kitchen. COS- food was reheated to 202 degrees Fahrenheit and 168 degrees Fahrenheit C/A: Active cooling starts at 135 degrees Fahrenheit. Monitor temperatures to prevent bacterial growth.
