Observed a flat of fresh trout carcasses being cleaned in a sink. When asked for an explanation the staff declared that the fish had been caught by campers at a local trout farm. The staff stored the fish on ice and placed in a cooler. All protein in the facility must come from an approved source/supplier. 511-6-1-.04(2)(d)

Observed multiple rolling racks of food in the blue kitchen freezer, blue kitchen cake/desert area and the red kitchen by the ovens not covered to prevent contamination. Also observed broken lids or lids not properly closed/sealed on dry fruit containers in the yellow kitchen.
