Observed food items in WIC and below prep top not stored covered (noodles, dumplings, sweet and sour chicken, chicken wings, egg rolls).
CA: Food shall be protected from cross contamination by being stored covered unless actively in use or cooling (can be stored uncovered or loosely covered).
COS: PIC covered items with plastic wrap.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed in-use utensils (rice spoons) store in container of water reasing at 74 degrees in front food service area.
CA: In-use utensils may be stored in water if water is maintained at 135F, or stored dry, in a clean, protected location to prevent contamination.
COS: PIC removed utensils.
