Observed no paper towels at handwash sink in main kitchen.
CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with drying provisions.
COS: Employee retrieved paper towels.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed multiple foods in RICs (raw fish, shredded cheese), WIC (raw fish, shredded cheese) and WIF (raw fish, broccoli florets) not stored covered.
CA: Food shall be stored in packages, covered containers, or wrappings to be protected from overhead contamination.
COS: PIC covered all uncovered food items.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed microwaves and RICs in main kitchen with a buildup of food debris.
CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.
*1/23/26 UPDATE: Both RIC units were detailed clean. Both microwaves still had heavy buildup - health dept to check back.

12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee cutting lemons on prep top in the back of main kitchen without a hair restraint.
CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints (ex: hats or visors) and have hair past shoulder length pulled back.
COS: Employee put on a hat.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed significant build of grease and food debris present on sides/under of equipment and on floors.
CA: All physical facilities shall be maintained in good repair and shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed personal item (phone) on food contact surface (prep top) in back of main kitchen.
CA: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.
COS: PIC removed phone from prep top and relocated to office.
