Observed diced tomatoes cooling (52 degrees F) tightly covered in reach in cooler in the main kitchen.
CA: Food cooling may be loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
COS: Tomatoes were left loosely covered to finish cooling (within time/temperature parameters).
