4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed food spills and debris on several containers stored in prep top cooler. All food contact surfaces shall be cleaned and sanitized between uses and as needed to prevent food accumulation and contamination.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several containers of prepped food in RIC without any date marking. All food not used within 24 hours shall be date marked for use within 7 days of prep.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Door of RIC was observed not sealing when closed. Cooler was maintaining ambient temp and no foods observed out of temp at time of inspection. All equipment in facility shall be kept in good repair to avoid contamination.
