6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed reach-in-freezer not holding proper temp. Cold holding for TCS foods shall be 41F or below. COS. PIC discarded at risk foods and moved safe foods to other cooler for storage.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed ice scoop being stored on top of ice machine on dirty surface. Scoop shall be stored in a sealed container or inside building between uses to avoid contamination. COS. Ice scoop brought inside building for cleaning by PIC. REPEAT.
