Observed employee drink without lid & straw, and opened snack on food prep table with slicer. CA: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. COS: Employee removed items from kitchen.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed dish machine reading at a sanitizer level less than manufacturer's recommended level of 50ppm. Sanitizer test strip read 0 ppm. CA: Chemical sanitizers generated by a device located on-site at the food service establishment are to be operated and maintained in accordance with manufacturer’s instructions. PIC stated maintenance was called. PIC notified to use 3 vat sink until dish machine in good repair.
6-2 - proper date marking and disposition

Observed multiple RTE TCS food items (individual portions of rice pilaf (discard 5/2), yellow rice (discard 4/26), cooked chicken wings (discard 5/2), tartar sauce (4/15), site-made honey mustard (4/26) held past discard date in facility. CA: A food that requires datemarking shall be discarded if it exceeds 7 days. COS: PIC discarded food items.
