Observed raw beef stored on top of containers of corn starch and flour in main kitchen. Observed open container of beef stored directly touching open container of chicken in walk in cooler. CA: All raw meats stored based on internal cook temperatures and away from all ready to eat foods. COS: PIC organized food storage by cook temperature.

Observed egg rolls cooked at 12:00 cooling at room temperature at 1:40. CA: Cooling shall be accomplished in accordance with the time and temperature criteria. COS: PIC put egg rolls in freezer to rapidly cool.
