Observed employee keys, jacket and purse stored above single service items. CA: Areas designated for employees shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC removed items to designated area.

Observed employee personal drink without disposable cup, lid, and straw in reach in cooler above and next to food products. CA: Employees should drink from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS: PIC discarded bottle.

Observed food employee preparing food on grill while wearing bracelet. CA: Food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food, with the exception of a plain ring such as a wedding band. COS: PIC had employee remove bracelet from wrist.

Observed damp towel stored on shelf in main kitchen area. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution. COS: PIC placed towel in sanitizer solution.

Observed personal items (keys, reusable water bottle) stored on shelf above drink machine syrups. CA: Areas designated for employees shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC removed items to office.

Observed basket of raw shelled eggs above grill held past 4 hour discard time (11:00am). CA: PIC stated label had not been updated to reflect new basket of eggs, however no way to verify therefore eggs were discarded. Discussed adding initial temperature to log.

Observed food service employee handling food wearing a watch. CA: PIC had employee remove watch.

Observed ice machine not cleaned at a frequency to maintain clean to sight and touch. CA: Manager cleaned.

Observed food service employee handling food wearing a bracelet. CA: PIC had employee remove bracelet.

Observed wet stacking of metal pans. CA: Instructed manager to rewash, sanitize, then air dry before stacking pans.
