Observed container of pimiento cheese directly touching container of raw fish in walk-in cooler. Also observed shell eggs directly touching containers of milk. CA: Foods shall be protected from contamination by storing raw meat and poultry products by cook temperatures and separate from ready to eat foods. COS: Pimiento cheese and relocated away from raw fish and shell eggs stored below milk.

Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizer in dishwasher stored below manufacturer's recommendation. CA: Sanitizer must be at manufacturer's recommended level. COS: Sanitizer container was changed out, and unit was primed until acceptable concentration met.
