Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee preparing food without beard guard. CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. COS: PIC instructed employee to restrain beard.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed food employee preparing food in main kitchen with bracelet on wrist. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: PIC had employee remove bracelet.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed several damp and dry wiping clothes in the front food service prep top area and main kitchen area counter. CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution. COS: PIC relocated cloths to a sanitizer bucket.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed multiple plastic scoops scored inside of sauces (ginger and teriyaki). CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored with their handles above the top of the food and the container. COS: PIC replaced and stored scoops properly.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed multiple plastic containers in dishwashing area stacked together wet. CA: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food. COS: PIC restacked dishes properly after washing.
