6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed cole slaw, leafy greens, and homemade dressings temping above 41 degrees Fahrenheit. The food and ambient temperatures were ranging from 51 degrees Fahrenheit to 56 degrees Fahrenheit. The cole slaw was temping to 56 degrees Fahrenheit and the ambient was 51 degrees Fahrenheit. CA: All Time/Temperature Control for Safety (TCS) foods shall be stored at 41 degrees Fahrenheit or below for cold holding. COS: All food was moved to the prep cooler and the front reach in cooler. Food was not discarded because it was from a delivery that was made around 9:05AM.
