4-1A - food separated and protected
Regulation: 511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - packaged & unpackaged food separation, packaging, and segregation (p, c)
Observed raw meats stored next to cooked meats in make table cooler. Observed raw chicken and shell eggs stored above cooked and ready-to-eat (RTE) foods. CA: Raw uncooked meats and vegetables shall be stored with the highest cook temperature at the bottom and the lowest cook temperature towards the top. RTE foods shall be stored protected and covered above raw meats and unwashed vegetables. Person in charge (PIC) removed and reordered foods.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed minimal labeling on food in walk-in cooler (WIC) and minimal date marking. Observed numerous labels on containers incorrectly naming foods. CA: Food shall be accurately labeled unless easily identifiable. Unpackaged food shall bear a discard date of a maximum of 7 days from the prep date. The prep date is considered "Day 1".
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(b) - working containers, common name (pf)
Observed a white spray bottle containing chemicals with no label sitting between the flattop and fryer. CA: All chemicals transferred to working containers shall bear a label identifying its contents. PIC labeled the spray bottle.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed rice prepped earlier in the day cooling in large bin. Food items cooling shall be placed in a shallow pan or container to allow for heat circulation.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed numerous scoops stored in bulk containers either with handle touching food or having no handle at all. PIC removed scoops from bulk containers.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed containers stacked wet in the dishwashing area.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(o),(p) - using drain plugs; maintaining refuse areas (c)
Dumpster doors open. Large piece of furniture is propping the enclosure door open. Grease trap lid is open and appears almost full.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Observed employee items stored on prep table in kitchen. Employee items removed and relocated.
