Observed sanitizing cloths nut fully submerged in sanitizing solution buckets (many hanging over side). Keep sanitizing cloths in sanitizing solution. COS
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed small serving bowls on floor kitchens stored upright and exposed. Keep bowls and plates stored inverted, covered, or use cover (wrapped) dish. COS
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
Observed original protective plastic covering on some equipment (dish washer, booster heater, rolling tray racks, etc.) that needs to be removed to provide easily cleanable and durable surface. Complete removal of plastic by 12/5/25.
15B - warewashing facilities: installed, maintained, used; test strips

While DW (Main Kitchen) functioning properly and providing proper final rinse (173at dish), DW booster heater operation light is out. Repair or replace light.
15C - nonfood-contact surfaces clean

Observed accumulations of debris on tip skillet frame, sliding tray rack rails, and wire rack/plastic shelving in WIC's. Clean surfaces by 12/5/25.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulations of debris, splash or grease/oils on floor of walk in units, ceilings of dish area, and WIC fan grills. Clean surfaces by 12/5/25.
