6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed numerous RTE TCS foods prepared 8/11 with an improper discard date of 8/18. Foods prepared and held greater then 24 hrs shall be marked with a 7 day max discard date with day #1 being the prep date (add +6 to prep date, not +7). COS
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed butter scoop stored in cool/room temp water. Serving utensils shall be stored clean and dry, in product being served with handle exposed, or in hot (1325+F) water. Scoop removed to dish line for cleaning and sanitization. COS.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed plates/bowls on expo line stored upright and exposed. Store tableware inverted or covered. Also observed wet stacking of drink cups and glasses. Alos cups to air dry prior to stacking.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulations of debris under ice machine, and in grout lines of WIC. Clean surfaces at a frequency to prevent accumulations by 8/23/25.
