Routine
All cold and hot held items were in compliance. All food in freezer frozen solid. Approved Additives: Vanilla Extract, Almond Extract, Maple Extract, Red food coloring, Lavender oil, and liquid smoke. Note: If the facility wishes to use the Portico smoked salmon filets (or any other brand of smoked salmon) permanently, there must be a parasite destruction letter kept on file at the facility that can be provided to the health department inspector at the time of the inspection. The facility does not normally have this product and does not intend to have this product going forward. Note to Inspector: The facility no longer uses time control for the food items held on the hot line. They are recording temperatures and using hot and cold holding methods only.
