Washed utensils and equipment shall be rinsed so that abrasives and cleaning chemicals are removed through the use of water or a detergent-sanitizer solution by using one of the following procedures:

  1. Use of a distinct, separate water rinse after washing and before sanitizing; (C)
  2. Use of a detergent-sanitizer as specified under subsection (6)(o) of this Rule if using a warewashing system for CIP equipment; (C)
  3. If using a warewashing machine that does not recycle the sanitizing solution as specified under paragraph 4 of this subsection, or alternative manual warewashing equipment such as sprayers, use of a nondistinct water rinse shall be: (i) Integrated in the application of the sanitizing solution, and (ii) Wasted immediately after each application; (C) or
  4. If using a warewashing machine that recycles the sanitizing solution for use in the next wash cycle, use of a nondistinct water rinse that is integrated in the application of the sanitizing solution. (C) Corrective Actions: Education was provided to the manager and employee discussing to ensure all portions of the sink are completely filled as directed, first compartment with a detergent and water, the second compartment with just water, and the third compartment with an approved sanitizing solution. After washing in the first compartment the equipment is to be submerged into the second compartment with just water before being transferred to the sanitizing compartment.
