Observed quaternary ammonia concentration of zero ppm when mechanical warewashing machine was evaluated. Rule: 3. A quaternary ammonium compound solution shall have a minimum temperature of 75ºF (24ºC), P have a concentration as specified in DPH Rule 511-6-1-.07(6)(g) and as indicated by the manufacturer’s use directions. Corrective Action: Maintenance supervisor contacted EcoLab. PIC will utilize three compartment sink until machine is fixed.

Observed facilities manual warewashing sanitation method measuring less than required concentration. A chemical sanitizer used in a sanitation solution for manual operation at contact times specified of this Rule shall meet the requirements specified in DPH 511-6-1. COS: PIC made the correction to get the concentration at the adequate concentration.

Observed pink residue along the chute of the ice machine. In equipment such as ice bins and beverage dispensing nozzles and enclosed compartments of equipment such as ice machines shall be cleaned at a frequency specified by the manufacturer or at a frequency necessary to preclude the accumulation of soil or mold. COS: PIC cleaned and sanitized the chute of the ice machine.

Observed containers in the walk-in cooler not labeled with date marking. Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the day/date in which the food shall be discarded. COS: PIC created labels for the items.
