6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed ambient time of the cold bar cooler measuring at 50F degrees. Three gallons of whole milk measured at 49F-51F degrees for more than 4 hours. 6 cartons of heavy whipping cream were measured at 46F-51F degrees for more than 4 hours. All aforementioned products discarded. Do not use cold holding unit until it has been fixed and can hold a minimum temperature of 41F degrees.
