6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed deli ham and cut leafy greens being stored at front salad bar at 54-53 degrees. Observed pasta bake being stored in reach in cooler for more than 6 hours at 56 degrees.CA: All foods must be kept at 41 degrees or below while being stored for cold holding. CO: All food was disposed. Coolers were checked for proper temperature.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed slime build up on the interior of the ice machine chute in the food prep area. Observed dried food accumulation on the mixer head. CA: All food contact surfaces; equipment and utensils shall be kept free of food, dust, slime or other accumulations to sight and touch. COS: CFSM had all items cleaned during the inspection.
