Observed a employee cooking in the kitchen with a beard longer than 1/2 in length, . Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. the manager will have beard guard order on the next truck by 05/25/26

Food temperature measuring devices may not have sensors or stems constructed of glass, except that thermometers with glass sensors or stems that are encased in a shatterproof coating such as candy thermometers may be used. The manager should ensure that the cooler is properly set to maintain food at proper temperature.
