6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods in server station prep cooler above 41 deg F. Most items were non TCS. Whipped topping at 50 deg F and dairy butter product at 54 deg F. COS: Both TCS products were discarded. CA: TCS products must be maintained at 41 deg F or below. Repair cooler.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed heavy build up on fan in walk in cooler. CA: Increase cleaning frequency of walk in cooler fan cover.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed AC leak in back hallway causing ceiling damage and localized dripping into bucket. Observed ceiling damage in side prep kitchen. Observed floor finish peeling/damage in various areas. Observed hole in wall (1x2') for ware washing plumbing. CA: Maintain physical facilities in good repair.
