Observed several cartons of fresh strawberries with fuzzy, white mold growth. Delivery dates marked on cardboard box were 9/8 and 9/15. Strawberries were offered to students and daycare kids today for lunch. CA: all food items including produce must be maintained in fresh, safe, and good condition. If food product must be retained for supplier credit, then food items must be separated from bulk stock and appropriately labelled. COS: strawberry cartons discarded. Staff that prepared strawberries reported that she purposely chose a carton that did not have mold growth to wash and serve.

Observed multiple containers single portion cheerio cereal, a box of single serving craisin packets, and four milk crates of milk kept past the manufacturer listed expiration date. Cheerios were marked 2/2025, milks marked 3/17 or 3/14, and craisins were marked 2/2025. All food items must be used or discarded by the manufacturer expiration date.

Observed ice deposits on metal food storage shelves and collected on boxed or covered food items that appeared to source from ice drips on the ceiling around the fan unit at the back of the walk-in freezer. Food items stored the walk-in freezer must be protected from non-potable water contamination. Manager will place work order for fan unit.

Observed three cutting boards stored in the main kitchen with excessive etching and discolored surfaces. Cutting boards must be washed, rinsed, and sanitized between uses and discarded once the surface is no longer easily cleanable to prevent food debris accumulation. COS CFSM removed cutting boards from kitchen and will order new ones. The kitchen has enough cutting boards now to continue operations.

Observed ice build-up on the ceiling of the walk-in-freezer as well as on the ceiling light cases and on the floor beneath the ceiling fans. The walk-in-freezer must be serviced as often as necessary to prevent ice accumulation to ensure stored food is not contaminated and to preserve the safety of the staff while in the walk-in unit. Staff will place a work order for servicing the unit.
