4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed in-use dishmachine dispensing sanitizer below the 50 ppm mark. All dishes must be properly washed, rinsed and sanitized after usage. COS Facility adjusted the line to the sanitizer bottle and removed a kink in the line. Machine dispensed at 50 ppm after adjustment. Facility unable to prime machine due to issue with code. Hobart rep. called to visit and prime machine.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Upon arrival observed employees with beards not wearing a beard net. When in kitchen, hair may not be loose. All employees must have hat or hair net on and employees with beards 1/2 inch or longer must wear a beard net. COS - Proper hair restraint discussed with PIC employees put on beard nets.
15C - nonfood-contact surfaces clean

Observed excessive debris on the bottom of the reach-in freezer by the cook line. COS area cleaned.

Observed ice-build up on the door of the walk-in freezer. Freezer door and gaskets must be kept free of ice accumulations to ensure the freezer door can shut completely.
