Observed the facility to be in operation without a certified Food Safety Manager. Owner stated he will get the certification to the EH office by next Friday after the exam.
10D - food properly labeled; original container
Regulation: 511-6-1.04(7)(d) - other forms of information (c)
Observed the facility operating without a method of allergen notification for consumer. Facility has new menus on order that have the allergen notification statement but have not yet received the menus since opening. CA: unpackaged food items containing a major food allergen as an ingredient must have a written notification declaring which major food allergens are contained in that food item. COS: EH provided a sample statement of general allergen notice for posting until new menus are obtained.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed the facility to utilize QUAT tablets for sanitizer buckets and 3 compartment sink without QUAT test strips onsite. Facility does have chlorine test strips. CA: appropriate test strips must be onsite for selected sanitizer. Owner will order
