6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed merchandiser cooler for condiments temping between 50-42 degrees. Staff state that condiments are in and out of cooler. Discussed lowering temperature in cooler and temperature abuse of condiments. Condiments discarded.
6-1C - proper cooling time and temperature
Regulation: 511-6-1.04(6)(d) - cooling (p)
Observed containers of pulled pork and cooked chicken wings that were cooled overnight and did not reach target times and temperatures. All TCS food items must be cooled from 135 to 70 degrees F within 2 hours and from 70 to 41 degrees F in another 4 hours. COS staff informed of target times and temperatures, items discarded.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed Kitchen Manager and dishwasher to be engaged in kitchen duties without proper hair restraints. Observed the a member of kitchen staff to be without a facial hair restraint as well. COS hair nets given to staff. Employee with beard informed of facial hair restraint requirements.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed house flies throughout the kitchen. Coppermines Pest Control handles management monthly. All facility windows have screens, and no doors were observed to be propped open.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed grease build-up on lines and vents of exhaust hood. Observed equipment gaskets with debris and mold-like debris. Observed a shelf in a lowboy freezer that has rust and the coating peeling off. All nonfood contact surfaces must be cleaned and sanitized as often as necessary to prevent contamination of in use utensils, ready to use items, employee hands, and food prep surfaces.
