11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed container of raw shrimp sitting out on prep table thawing and container of raw cut chicken thawing in sink improperly (standing water). COS, Container of raw shrimp was placed in WIC to finish thawing and running water was turned on for container of raw cut chicken. Later, chicken was placed in WIC to cool down.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Walk-in cooler shelves observed badly rusted. Must be replaced. PIC said shelves are on the way; Facility had to return previous order because they had ordered the wrong size. Send verification to Bernotta.Linder@dph.ga.gov once received and replaced.
