1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
-Observed facility has failed to maintain Certified Food Safety Manager Certification. Old Certification is still posted. CA: Food Service establishment must have Certified Food Safety Manager. CTM, Please obtain Certified Food Safety Manager Certification and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs. Facility will be placed on risk control plan until certification is obtained.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(l) - removing dead or trapped birds, insects, rodents, and other pest (c)
-Observed large amount of rodent droppings in utility cabinet adjacent to prep area in rear kitchen area of the facility and hand wash sink near 3 compartment sink. Shredded plastic was also in cabinet with lids for portion cups. CA: Facility must ensure insects, rodents, animals and/or evidence of activity is not present. *CTM, notify pest control and clean area. Send documentation to Kristen.Tyler@dph.ga.gov within 72hrs.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
-Observed multiple employee food items stored with facility items in walk in cooler of facility; 3 tupperware containers stored on top shelf of walk in cooler above noodles, 2 tupperware stored on top shelf above noodles and eggs and next to crab rangoons, and bag items ie: rotisserie chicken stored above containers of broccoli. -Observed employee cell phone and earphone case stored on prep table container TPHC stored chicken and raw meat items in ice bath in cook area of the kitchen. CA: All employee items must be stored in designated areas to prevent contamination of food, equipment, utensils, and single service articles. *COS, Cell phone and earphones were stored in break area upon request. Create designated area for employee food storage in bin in walk in cooler.
