Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Wiping cloth Quat sanitizer solutions in-use not at proper minimum strength upon testing. COS, Sanitizer buckets were emptied and refreshed with new sanitizer solution. Retested and at minimum strength.
15C - nonfood-contact surfaces clean

Observed build-up of mold-like substance on shelves of back reach-in cooler (RIC). Also, front RIC with old, dried food particles at bottom of unit Clean shelves and bottom of cooler in a timely manner and send verification to Bernotta.linder@dph.ga.gov
