4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
-Observed in use Chlorine Sanitizer in the 3 compartment sink of the rear kitchen area with chemical concentrations around 0ppm. CA: All Chlorine sanitizers must be a proper minimum strength for manual warewashing. COS: Water was discarded and new chlorine sanitizer solution was made.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
-Observed Root Beer, Starry, and Pepsi soda dispensing nozzles in the dining area of the facility with slimy build up and debris. *CA: All food contact surfaces must be washed, rinsed and sanitized to prevent build up of slime and accumulations *COS, Soda dispensing nozzles were washed, rinsed, and sanitized upon request.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
-Observed vent for condensing unit in the walk in cooler heavily soiled with dust and debris. -Observed shelving in walk in cooler with dried dust and old food debris. CA: All non food contact surfaces must be free from accumulations *CTM, Clean shelving and walk in cooler vent and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs. Was violation previous inspection.
