6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
-Observed multiple TCS Food Items (Shredded Lettuces, Sliced Tomatoes, Deli Meats ((Ham, Roast Beef, etc.) prepared previous day in the prep top cooler across from the steam well of the cook area of the kitchen without proper date marking. -Observed TCS Food items (Cooked Octopus, Shredded Chicken) stored in the Reach in refrigerator across next to the bread holder prepped previous day without date marking. Deli meats were noted previous inspection for date marking. CA: All TCS (Time and Temperature Controlled for Safety) food items must be date marked if held more than 24hrs. *COS, TCS foods were date marked upon request by PIC.
