-Observed 2 large and deep (>2") stacked and covered clear plastic containers of cheese prepped this morning in the walk in cooler of the facility. Cooling methods being used/observed were not adequate in rapidly cooling Time/Temperature Control for Safety Foods. Food items may be stored uncovered if conditions permit; Recommended utilizing walk in freezer to accelerate cooling for a few minutes. Then placing items back in walk in cooler to complete cooling. *COS, Containers were uncovered, and placed in walk in freezer to rapid cool.

-Observed multiple large (>2") stacked and covered containers of breakfast burritos prepped earlier today in the walk in cooler of the facility. Cooling methods being used/observed were not adequate in rapidly cooling Time/Temperature Control for Safety Foods. Coached PIC to rapid cool breakfast burritos in walk in freezer to accelerate cooling. *COS, Breakfast burritos were placed in Walk in freezer to accelerate cooling. Ensure proper cooling methods are utilized to ensure proper cooling occurs.

-Observed wet wiping cloth stored on prep counter near pass thru holding warmer in the front service kitchen area. -Observed wet wiping cloth stored on top of reach in freezer near the fryer station in the kitchen. *COS, Wet wiping cloths were stored in sanitizer by employees.
