Observed eggs, diced tomatoes, and diced ham being held on a box on the grill above 41 degrees. (See temps) CA: TCS foods that are cold holding shall be held at 41 degrees or below. COS: PIC discarded the items.

Observed cooked sausage being held on the grill below 135 degrees. CA: All foods being hot held shall be held above 135 degrees. COS: PIC discarded the sausage.
