Observed TCS food being held past its expiration date. Discard Date of 11/14/24 today is 11/18/24. COS: PIC disposed of expired TCS item. CA: PIC and employees must monitor all TCS food items in order to insure that they are removed from cooling unit within 7 days.

Observed TCS food being hot held in warmer at temp of 111 F. During inspection I had PIC remove and place wings into the 2nd warmer and they warmed up to the appropriate temperature. CA: Warmers will need to be looked at by maintenance. We had to run the warmers at 200 F in order to maintain a temp above 135 F. PIC will contact me once maintenance has repaired warmer.

Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above.

Observed cooked bacon being held in WIC past its discard date. IT was dated for 10/4/23 and today is 10/13/23. CA: PIC will monitor dates and discard appropriate items. COS PIC discarded bacon into trash can.
