Observed chicken thawed at room temperature at 62F. Corrected on site by discarding.
Temperature foods being thawed should not be allowed to come above 41F.
Foods must be thawed under refrigeration, under cold running water that does not exceed 70F, or as part of the cooking process.

Observed time temperature for control for safety food stored above 41F in the prep line cooler and the reach-in cooler. I talked the owner about checking the food in the within an hour to make sure the food returns to 41F. I will follow up tomorrow to check the food temperatures. If the food is not at 41F or below tomorrow, the food above 41F will have to be discarded. Repeat violation from the previous inspection.
511-6-1.04(6)(f) - Time/Temperature Control for Safety; Cold Holding (P) (f) Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above.

Observed noodles, shredded cabbage and spinach stored in prep-top cooler above 41F. Spinach at 48F was discarded. Noodles and cut cabbage appeared to be cooling.

Observed noodles stored in reach-in cooler above 41F. PIC stated that these were thawed/soaked in tap hot water at approximately 11AM. These were placed in a container in the reach-in cooler. Temperature was 68F at approx 3PM and 62F at 3:50PM. These were divided into smaller containers and placed back in reach-in cooler.

Observed kimchi stored on shelf under prep table with no date marking. Kimichi must be date marked and refrigerated. Observed opened milk with no date markings. Observed thawed dumplings with no date markings.
