Observed drink nozzles on soda machine with black substance on them. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC needs to clean and sanitize drink nozzles.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed raw fish thawing in prep sink soaking in water. When thawed in a prep sink, food items shall be thawed completely submerged under cool running water. COS: PIC turned the water on in the prep sink.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed scoop in sugar bin with handle touching the food. When stored in a non TCS food utensils shall be stored with their handles above the top of the food within containers or equipment that can be closed. COS: PIC placed scoops with handles above food.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed multiple pans and tubs stacked inside one another while wet. Equipment and utensils shall be allowed to completely air dry before stacking. COS: PIC separated pans.
