Dressing that was on a rack about to be cooked had a temperature of 50 deg f. CA: All tcs food cold holding shall be maintained at 41 deg f or below. COS: Put directly into the oven to cook. Suggested only taking pans out of the cooler that will fit into the oven, and leaving the rest in the walk in cooler until there is room.

Steak patties that were put on trays for breakfast were at 105 deg f. CA: All tcs food hot holding shall be maintained at 135 deg or above. COS: In the middle of breakfast service, but manager stated that next time she will make up the trays but not put the steak on there until the children walk by. Or she is going to add them to her list of food that are Time Controlled.

Spray bottles with quat sanitizer solution had a concentration that was higher than the manufacturer's recommendation. It was at 400 ppm or above. All chemical sanitizer generated on-site shall meet requirements specified in 40 CFR 180.940. COS: Dumped and re-made to correct concentration.
