Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Gravy in middle reach in cooler that is cold holding was temped at 45 deg f. CA: All tcs food items that are being cold held shall be maintained at 41 deg f or below. COS: Discarded during inspection. The unit has an ambient had a temperature of 51 deg f. Advised the facility to put non-tcs items in the unit until it has been fixed.

CFSM posted expired 01/2025; CA: A CFSM certificate which has expired shall not be posted in the food service establishment. Within ninety days of the expiration of the CFSM certificate, the CFSM shall enroll in an approved food safety training course, pass an approved exam, and obtain a new certificate; COS: Taken down during the inspection.
