2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(c) - when to wash (p)
PIC was prepping chicken, then she adjusted the trash can lid (full of trash), and then went to cover a food item in the reach in cooler without washing her hands.
CA: Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles After engaging in other activities that contaminate the hands
COS: Washed her hands. Went over the proper protocol for handwashing and when to wash your hands.
4-2A - food stored covered

Egg soup left uncovered on the prep top table and glass noodles in the RIC stored uncovered. CA: All food, unless cooling, shall be stored covered to prevent overhead contamination. COS: Covered during inspection.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Unused hot holding equipment in the main kitchen was dirty to sight and touch.
CA: Non-food contact surfaces shall of equipment shall be kept free of accumulation of dust, dirt, food residue and other debris.
