Observed employee drink exposed with no lid stored in food storage area. Employee drinks and personal items shall be stored in a designated area away from food prep and storage areas. Manager removed the drink
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed sliced tomatoes and pickles stored past its discard by time. Manager shall ensure first in, first out rule is practiced so items will be discarded at the proper times.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris under and along the grill line and front service areas. Clean at a frequency to prevent accumulations of debris.
