Observed 2 shallow chafing dish pans containing TCS food stuff in WIC to be un-covered while not in use. CA: Cover any food in WIC area while not actively manipulating it. COS: PIC covered pans.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several TCS food items in the WIC that did not have a date or common food label of container contents. CA: Date any TCS food with either prepared on date or discard on date and a common food name of container contents.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.5 (2)(jj) - food service equipment, acceptability.
Observed RIC at front food service counter to be residential grade instead of commercial grade. CA: Replace RIC with commercial grade RIC.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed food debris buildup on and around Wok station as well as floors throughout kitchen in need of a thorough cleaning. CA: Clean and sanitize all area surfaces around Wok station and implement a cleaning schedule that will prevent food debris buildup. PIC in process of cleaning but needs to devote more assets to task.
