6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed milk in one lunch line reach in cooler at 45 degrees F and 48 degrees F. School's internal thermometer read 59 degrees F. C/A - have cooler serviced so it can keep milk at or below 41 degrees F even with doors open for lunch service. COS - kitchen manager had milk moved to walk in cooler to recool it since it had only been in reach in cooler for approximately one hour.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed no CSFM certification on site. C/A - staff member at school is required to have a CSFM certificate. Please obtain one in 90 days.
